Tuscan Cabbage Soup

Vegetable soup with a difference especially – if you make it using our wonky courgettes, peppers and onions (when in season).Time and servings

Ingredients
- 2 tablespoons of pesto sauce
- 225 g of macaroni pasta
- 2 litres of vegetable stock
- 2 sprinkles of salt
- 2 sprinkles of pepper
- 1 pepper, deseeded and diced
- 250 g of salami, diced into cubes
- 1 cabbage, trimmed and finely shredded
- 400 g of chopped tomatoes
- 1 onion, peeled and chopped
- 300 g of courgettes, sliced
Method
Step 1
Heat a large saucepan until hot and add the salami. Cook for 2-3 minutes until the fat begins to come out of the meat. Then add the onion, red pepper and courgettes and fry for a further 5 minutes.Step 2
Stir in the pesto sauce, stock, pasta, cabbage and chopped tomatoes and bring to the boil.Step 3
Cover and simmer for 15 minutes until piping hot.Step 4
Season to taste and serve.
