Simple Cupcakes
This simple cupcake recipe takes half an hour and keeps the flavour basic, so you can pop whatever flavour frosting you like on top and enjoy as a delicious treat!

Makes 12 cupcakes
Ingredients
- 100g butter
- 100g caster sugar
- 2 eggs
- 100g self-raising flour

Instructions
- Preheat the oven to 180ºC/160ºC fan/Gas 4.
- Beat butter with the caster sugar until light and creamy. Add 2 medium eggs and beat well. Fold in 100g self-raising flour.
- Spoon the cake mixture into a bun tin lined with 12 cake cases. Bake for 15 mins, or until golden and a skewer inserted into the centre of the cakes comes out clean.
- Leave to cool then top each cake with a swirl of frosting in whichever flavour you choose.
