Great for a hearty breakfast or light lunch, this simple and tasty dish features spicy rice with flakes of salmon and eggs.Time and servings

Ingredients
- 4 boiled eggs
- 4 spring onions, (Optional)
- 800 ml of veg stock
- 20 g of fresh parsley (optional)
- 2 tsps of smoked paprika
- 100 g of frozen peas, (You can use some frozen green beans too)
- 1 clove of garlic clove
- 1 juice of 1 lemon
- 1 large onion
- 300 g of basmati rice
- 213 g of tinned salmon
- 3 tablespoons of curry powder
Method
Step 1
Cook the rice to the packet instructions.Step 2
Add the oil to a pan and cook the chopped onion and the garlic until softened, add the spices and cook for a couple of minutes.Step 3
Add the cooked rice, and stir then add the stock.Step 4
Add the tinned salmon, peas and the lemon juice and sliced boiled eggs.Step 5
Stir in and taste to check the seasoning.Step 6
Enjoy.
