These fruity, cheesy mini tarts are perfect for serving at summer parties or taking on picnics.

Ingredients

  • 8 sprigs of thyme
  • 2 peaches, peeled
  • 300 g of puff pastry
  • 200 g of brie, thinly sliced
  • 4 tbsp of mango chutney
  • 2 tbsp of milk

Method

  1. Step 1

    Heat the oven to 200°C/180°C fan/Gas 6. Put the pastry on a lightly floured surface and roll out a little more. Stamp out 8 x 9cm rounds. Lift onto a baking tray (you may need 2) and mark a circle 1cm from the border using a sharp knife.
  2. Step 2

    Halve the peaches, remove the stones and slice the flesh. Arrange the peach and Brie slices in the centre of each pastry circle and spoon a little mango chutney on top. Brush the pastry rims with milk and bake the tartlets for 20 minutes until pastry is cooked through and puffed up around the edges.
  3. Step 3

    Scatter with thyme sprigs to serve.
