A quick and simple starter that's ideal for date night (or even a Valentine's treat in February), or impressing guests on other occasions.

Ingredients

  • 1 handful of coriander, roughly chopped
  • 2 tsps of sugar
  • 1 lemon
  • 1.5 cm of fresh ginger
  • 1 clove of garlic
  • 1 tbsp of olive oil
  • 6 tablespoons of rice wine vinegar
  • 1 red chilli, finely chopped
  • 6 Market Street Fishmonger Oysters

Method

  1. Step 1

    Grate your ginger and garlic then set aside.
  2. Step 2

    In a bowl add the rice wine vinegar, finely chopped and de-seeded chilli, sugar and roughly chopped coriander.
  3. Step 3

    Add the bowl of ingredients to the pan and heat until they start to boil, then take the pan off the heat and set aside.
  4. Step 4

    In a pan heat your olive oil and gently fry the garlic and ginger for about 2 minutes
  5. Step 5

    Put a spoonful of your sauce on top of your shucked oysters and put under the grill for 11 minutes - or until the oysters start to curl at the edges.
  6. Step 6

    Drizzle with freshly squeezed lemon juice to serve.
