Marinated BBQ Halloumi Kebabs
Featuring chilli, zesty lemon and a hint of mint, these Halloumi Skewers make one tasty vegetarian addition to your barbecue.

Ingredients
- 120g Halloumi
- 1 Red Pepper
- 1 Yellow Pepper
- 1 Courgette
- ½ bunch Bunch Mint
- ½ Fresh Chilli
- 1 Lemon
- 2 tbsps Olive Oil

Instructions
- Put 6 wooden skewers into cold water to soak – this will stop them from burning.
- Chop the halloumi into 2cm cubes.
- Cut the peppers into 2cm pieces removing the stalk, seeds and any white pith. Then cut the courgette in half lengthways, then slice to approx. ½cm thick pieces, and put the cut veg and halloumi to a bowl.
- Finely chop the mint leaves, discard the stalks.
- Carefully deseed and finely chop the chilli, put as much in as you dare!
- Zest the lemon then add the zest to the bowl with the mint leaves, chilli, and 2 tablespoons of olive oil and grind of black pepper. Mix well to coat the ingredients.
- Put the halloumi cubes, peppers and courgette pieces onto the skewers. Add to the BBQ and cook for 10 to 12 minutes, or until the halloumi is golden and the veg is soft, turn them halfway through cooking.
