Homemade Jammie Dodgers
Everyone loves a Jammie Dodger, this recipe lets you try your hand at making your own version. The kids will love it, if you've not eaten them all yourself.

Makes 12 biscuits
Ingredients
- 350g plain flour
- 1 tsp bicarbonate of soda
- 150g caster sugar
- 110g unsalted butter, softened
- 60g golden syrup
- 1 egg
- 6 tbsp raspberry jam
- 2 tbsp icing sugar

Instructions
- Preheat the oven to 180°C/350°F/Gas 4. Line two baking sheets with baking parchment.
- In a large bowl, mix together the flour, bicarbonate of soda, caster sugar, butter, golden syrup and egg until a soft dough is formed.
- Dust the surface with flour and roll the dough out to about 5mm thick. Cut shapes out, and using a small circular cutter make a hole in the centre of half of them. Place on baking sheets and bake for 15 minutes. Cool on a wire rack.
- To finish, place a little jam or lemon curd in the centre of the shapes without holes. Place the shapes with the holes on top of the jam halves. Sift icing sugar over and serve.
