Fluffy Sponge Meets Rich Vanilla
Ingredients
(Makes 12 cupcakes)
For the Cake
- 150g Unsalted butter (softened)
- 150g Silver spoon caster sugar
- 3 Beaten eggs
- 150g Self raising flour
- 1 1/2 tsp Vanilla extract
For the Buttercream
- 125g Unsalted butter (softened)
- 250g Silver spoon icing sugar
- 1 1/2 tsp Vanilla extract
- 1/2 tbsp Milk
Let's Bake
1. Preheat the oven to 180°C/160°C Fan/Gas mark 4 and line a 12-hole muffin tin with cases.
2. Mix butter and sugar together until pale and fluffy. Add the eggs, mix, then add the vanilla extract.
3. Fold in the flour, then divide between the cases.
4. Bake in the oven for 18-20 minutes until risen and golden. Leave to cool.
5. To make the buttercream, beat the softened butter, vanilla and half the icing sugar until smooth. Add in the remaining icing sugar and milk then mix until soft and fluffy.
6. Ready to decorate? Use a piping bag to pipe swirls onto the cupcakes.

The best - don't change the recipe
Unlike other leading brands, this doesn't contain the starch and always gives a perfect finish. When I want to absorb some moisture for a stiffer icing, I can add potato starch. Many leading brands have altered their recipe. This is still the best.
THE BEST..!
The alternatives are icing sugar in a paper bag that forms rocks. This icing sugar doesn't even need sifting. Perfect.
Annoying packaging!
This would be far better in some plastic. It's a paper bag in a card box, and if you remove the bag it balloons and settles like cereal can, making it difficult (and very messy!) to cram back in the box. Is good icing however and nice when bought from the store, but my home delivery box came next to a 5 litre water bottle which was cold and condensed. The icing box was very sticky and damp- I thought there may have been a leak in the bag but I think it's just some left over sugar from manufacturing, like you sometimes get with flour. I may buy again but purchase from the store myself to avoid contact with any other product.
