Green Pea Slime Soup
Boil up this creepy cauldron of green pea slime soup! It’s easy to make and you can cook the day before and keep it in the fridge to heat through before serving.

Ingredients
- 1 tablespoon sunflower oil
- 1 large onion
- 2 sticks celery
- 350g potatoes
- 1½ l vegetable stock
- 800g frozen peas
- 8 rashers streaky bacon

Instructions
- Finely dice the onion, celery & potatoes.
- Heat the oil in a large pan, and stir-fry the onion, celery and potatoes.
- Pour in the stock and bring to the boil. Reduce the heat and simmer for 10 minutes.
- Add peas, bring back to the boil, simmer for another 10 minutes. Then blitz the soup in a blender until almost smooth.
- Grill the bacon until very crispy, drain on some kitchen paper and snap into small pieces.
- Ladle the soup into bowls and top with bacon.
