Chicken and Blueberry Salad
Blueberries' unique flavour give this chicken salad an exciting burst of flavour. This salad also works well with a blue cheese such as Stilton or Roquefort.

Ingredients
- 2 chicken breast fillets
- 3 tbsp oil
- 1 tsp dried oregano
- 70g blanched almonds
- 100g mixed salad leaves
- 150g fresh blueberries
- 150g feta cheese
- 1 orange
- 1 tsp wholegrain mustard

Instructions
- Heat the oven to 200°C/180°C fan/Gas 6.
- Brush the chicken with oil and sprinkle with oregano, then roast for 20 minutes until cooked through.
- Add the almonds for the last 5 minutes.
- Toss the mixed leaves with the blueberries, cooked almonds and feta and pile on to plates.
- Cut the chicken into thin diagonal slices and scatter randomly over the leaves.
- Whisk together the dressing ingredients and drizzle over the salad.
- Serve at once.
