Bits to buy:
250g-275g firm white fish/seafood, chicken, vegetables or eggs
From your cupboard:
1 tsp vegetable or olive oil
for extra heat, simply add the chilli
Keralan coconut curry
Recipe
Preparation: out the meat, fish/seafood, vegetables into generous pieces or halve your boiled-eggs.
If you don't like whole spices, powder these in a pestle and mortar and all them in at the end of step 3. Alternatively if left whole remove them with a spoon before serving.
1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds
2. Add the meat or vegetables and brown lightly
3. Stir in the main sauce along with 50 ml of water and bring to boil. Add the fish/seafood (if using) and simmer for another 3-5 minutes or until the meat or other protein is cooked through
Serves 2-3 with The Spice Tailor Naans, rice or parathas

- Try fish steaks for a fuller flavour
- Also great with shellfish (try fresh seafood or mussels), chicken, duck or hard-boiled eggs
- Make with seasonal vegetables and rice noodles for a great vegetarians meal
- Add a handful of halves baby tomatoes of a change
- Finish the curry with a little roasted, flaked coconut
- Add a little water if the sauce gets too think
- Add a little tamarind, vinegar or lime juice for extra tang

Great tasting curry
Great addition if you are short on time and want to make a great tasting curry for 2. These are very simple to make, as you just add the base sauce to your cooked meat and veg and cook for around 5-10 minutes. I did use the dried spices, which I blitzed down, these added a lot of flavour and a nice little bit of heat. For me, it was similar to a Thai green curry but with a more coconut and creamier flavour. Great value for money as they are so simple and great tasting, by far better than anything in a jar.
