Summer Strawberry Jam
800g Fresh or Frozen Strawberries
1kg Jam Sugar
Knob of Butter
Crush the strawberries with a potato masher and place them into a saucepan.
Add the jam sugar and heat gently. Stir continuously until the sugar dissolves but do not allow to boil.
Add the butter and keep stirring, increasing the heat and bringing it to a rolling boil, so that it bubbles vigorously, rises in the pan and cannot be stirred down.
Boil for 4 minutes only then remove then remove from the heat and ladle into warm, clean jars and cover.
Why not try replacing the strawberries with cherries or blackberries!
