Preparation and Usage
You'll need:
500g strong white flour
20g fresh yeast or
1 sachet dried yeast
310 - 330ml water
15ml olive oil
8g salt
Makes one large loaf
1. Set your oven to 200ºC,Gas Mark 6 and leave it to warm up.
2. Dissolve yeast in warm water, add olive oil.
3. Mix the flour and salt together in a bowl, add the yeast and oil mixture to then flour, mixing as you go.
4. Get your hands in the bowl and bring all the mixture together into a ball of dough.
5. Knead it for 10 - 15 minutes on a lightly floured surface until it's smooth and elastic.
6. Place it in a clean bowl and over with a clean damp tea towel or cling film and leave it somewhere warm for about 60 minutes.
7. Lightly mould the dough piece round and place onto a greased baking tray. Cover and allow to ferment for 30 - 45 minutes, until doubled in size.
8. Dust with flour and bake for 20 - 25 minutes, until your bread is golden.
Why not try...
adding sun-dried tomatoes and fresh basil to the mix, then shaping the dough in a knot for a different finish.

Poor
Not strong enough to make bread by hand, maybe OK in a machine. Does not develop a good structure and flavour is lacking.
Poor Quality
Have purchased a few bags of this flour in the hope that the initial ones were just a bad batch, alas they have all not been great. I would not consider this flour as strong, when baking bread with just this flour the loaves does not rise very well and end up with a sunken top and quite a job to release from the tin.
