A sachet of lemon flavoured sponge mix
A sachet of lemon flavoured drizzle mix
What you'll need:
2 medium eggs
60g softened unsalted butter, plus a bit extra for greasing
100ml semi skimmed milk
3 tsp boiling water
A whisk (electric is best, but a hand whisk will do)
A mixing bowl
2lb loaf tin
Greaseproof paper
A wire cooling rack
How to make the perfect Lemon Drizzle Loaf Cake:
Cooking appliances vary.
These instructions are given as a guide.
1. Set your oven to 160°C/325°F/Gas Mark 3 and leave it to warm up.
2. Grease and line your 2lb loaf tin (the butter will help the paper stick to the tin).
3. Now, empty the sponge mix into a mixing bowl and add the eggs, 60g of butter and 100ml of semi-skimmed milk.
4. Whisk the mixture together until it's combined and smooth. This should take about a minute.
5. Next, pour the mixture into the prepared tin.
6. Place the tin in the centre of your oven and bake for 35-40 minutes, or until your cake is risen and springy.
7. When ready, take your cake out of the oven and leave to cool on a wire rack.
8. While your cake is cooling, empty the drizzle icing mix into a small bowl and add 3 tsp boiling water to prepare the drizzle.
9. Mix to a smooth runny icing and drizzle over the top of your cooled loaf cake.
10. Then, put the kettle on and cut yourself a slice.
Just add:
2 medium eggs
60g softened unsalted butter
100ml semi-skimmed milk
3 tsp boiling water or alternatively 3 tsp lemon juice
Top tip:
To make it extra zingy why not try replacing water for fresh lemon juice when preparing the lemon drizzle.

Disappointed
I made this cake for my visiting grandchildren to enjoy. I followed the instructions to the letter but ended up with hundreds and hundreds of tiny lumps in the mixture - which meant overall I had less mixture than I needed for a good size cake! As others had said I did add fresh lemon juice to the drizzle and it helped cover up the small cake!! Have to say that despite this it did taste fairly nice, better than I expected....but will I buy again...NO!
Its changed
Im not sure whats happened to this but the texture of the sponge instead of being soft and crumbly is rubbery. It didnt rise as much either.
Add the real lemon juice !
Excellent cake mix - tasty, moist and makes a decent sized loaf cake. Had plenty of compliments on it but it really is fool proof - you cant go wrong. I would definitely recommend adding real lemon juice to the drizzle for a little bit extra though. Yum ! Will be buying again.
Really moist and soft
I have made this Several times now and it's so yummy. I usually split the bag in half and make a small tray bake as there is only me, then make the next half up when I need another tray bake. It's really easy to make, Bake it in my AirFryer. 160c for 30 mins. it's so moist and soft. Won't buy a made one any more when I can get 2 out of this mix. Shame I can't add a photo. Tray I use is the one foil one from the chilli chicken of Morrisons. Just wash it out each time and line it.
Easy to use.
Ok I admit that I don't stick to the instructions, but sometimes you just can't. I add some fresh juice and grated lemon rind to the sponge and I make the drizzle with fresh lemon juice instead of water. Also after the sponge has been baked I put thin slices of lemon on top before the drizzle. Very zingy and tasty.

Great cake mixture for a wet day in the school holidays, really tasty and kids loved making it, and eating it.
