Ingredients

  • 1 pinches of salt
  • 2 kg of wonky potatoes
  • 1 drizzle of olive oil
  • 1 pinches of pepper

Method

  1. Step 1

    Peel the potatoes and cut into small halves or 1/4s. Rinse the prepared potatoes under plenty of cold water.
  2. Step 2

    Preheat the oven to 200c.
  3. Step 3

    Place the potatoes in a large pan of cold water with just enough water to cover them. Add a good pinch of salt and bring them to the boil. Simmer for 5-6 minutes until the potatoes are cooked through but not falling apart. Drain through a colander and leave to cool.
  4. Step 4

    Place 2 large baking sheets into the oven and pour a generous glug of olive oil into the trays. Return the trays for 5 minutes until shimmering hot.
  5. Step 5

    Carefully tip 1/2 the potatoes into one tray and the remainder into the other. Allow them to sit flat in the oil. Season well with salt.
  6. Step 6

    Return to the oven and cook for about 45 minutes until crisp and golden, making sure the potatoes are turned regularly throughout cooking.
