White Chocolate and Raspberry Cookies

Ingredients
- 1 egg, beaten
- 250 g of self raising flour
- 150 g of caster sugar
- 225 g of unsalted butter
- 50 g of raspberries
- 100 g of white chocolate, broken into small pieces
Method
Step 1
Cream the butter and sugar together until light and fluffy.Step 2
Gradually beat in the beaten egg.Step 3
Fold in the flour, then mix in the chopped chocolate and the raspberries.Step 4
Divide the mix into 12-16 pieces.Step 5
Roll into balls then gently press them onto a lined baking tray.Step 6
Bake at 170 degrees for 12 minutes or until golden in colour.
