Ingredients

  • 1 egg, beaten
  • 250 g of self raising flour
  • 150 g of caster sugar
  • 225 g of unsalted butter
  • 50 g of raspberries
  • 100 g of white chocolate, broken into small pieces

Method

  1. Step 1

    Cream the butter and sugar together until light and fluffy.
  2. Step 2

    Gradually beat in the beaten egg.
  3. Step 3

    Fold in the flour, then mix in the chopped chocolate and the raspberries.
  4. Step 4

    Divide the mix into 12-16 pieces.
  5. Step 5

    Roll into balls then gently press them onto a lined baking tray.
  6. Step 6

    Bake at 170 degrees for 12 minutes or until golden in colour.
