Ingredients

  • 2 x 150g British rump pavé steaks
  • 160g Tenderstem broccoli
  • 3 white potatoes
  • 2 carrots
  • 20g horseradish cream
  • 4 garlic cloves
  • 5g fresh parsley
  • 5g fresh thyme
  • 1 tsp dried oregano
  • Morrisons Yorkshire puddings
  • Vegetable oil
  • Salt and pepper, to taste

Method

  1. Step 1

    Start the Veg: Preheat your oven to 220°C/200°C (fan)/Gas Mark 7. Peel and chop the potatoes into bite-sized pieces. Boil them over high heat, then reduce to medium and cook for 10-12 minutes until tender. Drain well.
  2. Step 2

    Roast Potatoes, Carrots & Garlic: Place the drained potatoes on one side of a baking tray. Drizzle with vegetable oil and season with salt. Peel and chop the carrots into thick pieces. Crush the garlic cloves. Add the carrots and garlic to the other side of the tray, drizzling with olive oil. Roast everything for 15 minutes.
  3. Step 3

    Continue Roasting: After 15 minutes, continue roasting the potatoes, carrots, and garlic for an additional 30 minutes, or until the vegetables are golden and tender.
  4. Step 4

    Cook the Steaks: While the vegetables are roasting, heat a pan over high heat. Season the rump steaks with salt and pepper. Cook the steaks to your preferred doneness: Rare 2 minutes each side, Medium-Rare 2-3 minutes each side, Medium 3-4 minutes each side Remove the steaks from the pan and let them rest on a cutting board for a few minutes.
  5. Step 5

    Cook the Broccoli: In a pot of salted boiling water, cook the Tenderstem broccoli for 3-4 minutes, or until tender-crisp.
  6. Step 6

    Make the Herb Sauce: While the steaks rest, finely chop the fresh thyme and parsley. In a small bowl, mix them with the horseradish cream, 1 tablespoon of vegetable oil, dried oregano, and a pinch of salt.
  7. Step 7

    Assemble & Serve: Slice the rested rump steak into strips. Serve immediately with the roasted potatoes, carrots, garlic, Tenderstem broccoli, and Morrisons Yorkshire puddings. Drizzle the herb sauce over the steak and vegetables.
