Tuscan Cabbage Soup

Vegetable soup with a difference especially – if you make it using our wonky courgettes, peppers and onions (when in season).

Ingredients

  • 2 tablespoons of pesto sauce
  • 225 g of macaroni pasta
  • 2 litres of vegetable stock
  • 2 sprinkles of salt
  • 2 sprinkles of pepper
  • 1 pepper, deseeded and diced
  • 250 g of salami, diced into cubes
  • 1 cabbage, trimmed and finely shredded
  • 400 g of chopped tomatoes
  • 1 onion, peeled and chopped
  • 300 g of courgettes, sliced

Method

  1. Step 1

    Heat a large saucepan until hot and add the salami. Cook for 2-3 minutes until the fat begins to come out of the meat. Then add the onion, red pepper and courgettes and fry for a further 5 minutes.
  2. Step 2

    Stir in the pesto sauce, stock, pasta, cabbage and chopped tomatoes and bring to the boil.
  3. Step 3

    Cover and simmer for 15 minutes until piping hot.
  4. Step 4

    Season to taste and serve.
