Ingredients
- 300g conchigilie Pasta
- 500g mince
- 1 white onion, finely diced
- 1tsp tomato puree
- 2tsp paprika
- 1tsp cumin
- 1 clove garlic, crushed
- Salt
- Black pepper
- 150g greek yoghurt
- 200g cherry tomatoes
- 1 handful parsley
- 4 tablespoons unsalted butter
Method
Step 1
Cook the pasta according to package instructionsStep 2
Whilst the pasta is cooking, fry your diced onion for about 2-3 minutes before adding in the lamb mince. Stir and season with salt and pepper.Step 3
Add 1 tsp of paprika, the cumin and tomato puree. Fry for a further 5-10 minutes until the onions are translucent and the mince crispy.Step 4
Whilst the pasta and mince is cooking, make your garlic yoghurt and paprika butter.Step 5
For the garlic yoghurt, combine greek yoghurt, a pinch of salt and crushed garlic. Mix well.Step 6
For the paprika butter, add the butter to a pan and gently heat until melted. Then add 1 tsp paprika and stir thoroughly to combine.Step 7
Once the pasta is cooked, remove from the heat and drain. Add to the bottom of your bowl before topping with a healthy dollop of garlic yoghurt. Top with the crispy mince, paprika butter, a handful of cherry tomatoes and a sprinkle of parsley.Step 8
