Full of flavour and full of colour, make tonight burger night with our recipe for a vegan southern style no-chicken burger.

Ingredients

  • 2 tbsp of cajun seasoning
  • 1 tbsp of sunflower oil
  • 20 g of rocket leaf
  • 60 g of vegan mayo, plus 2 tablespoons for slaw
  • 300 g of sweet potato fries
  • 1 pack vegan chicken strips/pieces
  • 2 burger buns, grilled
  • 0.5 red pepper, deseeded and finely shredded
  • 75 g of white cabbage, finely shredded
  • 1 carrot, peeled into ribbons
  • 0.5 red onion, finely sliced
  • 75 g of red cabbage, finely shredded
  • 0.25 red chilli, sliced
  • 15 g of coriander, chopped
  • 1 juice of 1 lemon
  • 1 tsp of sugar

Method

  1. Step 1

    Cook the Vegan Chicken Strips as instructed on the packaging.
  2. Step 2

    Mix the sweet potatoes with the sunflower oil and seasonings and cook the the pack instructions.
  3. Step 3

    Chop and mix the coleslaw. Season to taste with salt and pepper.
  4. Step 4

    When the Sweet Potato Fries and No chicken strips are ready assemble your burgers.
  5. Step 5

    To assemble the burger toast the sesame bun.
  6. Step 6

    Spread the base of the bun with vegan mayo.
  7. Step 7

    Add the rainbow slaw, then the no chicken strips, rocket salad and top with the toasted bun lid.
  8. Step 8

    Serve with the seasoned Sweet potato Fries.
