Ingredients
- 200g Best Maple Syrup
- 1tsp sea salt
- 1 tbsp dijon mustard
- 50g soft brown sugar
- 50ml balsamic vinegar
- 100ml rum
- 1.5-2kg gammon
- 1 orange sliced
- 1 cinnamon stick
- 3 bay leafs
- 6 cloves
- 1 onion sliced
Method
Step 1
For the glaze, simmer the maple syrup, sea salt, dijon mustard, soft brown sugar, balsamic vinegar and rum together for 5 minutes and leave to cool.Step 2
Place the gammon in a large pan and cover with water add the orange, onion, cinnamon stick, bay leaves and cloves. Simmer for 1 hour 20 minutes.Step 3
Remove the gammon from the water and place on a non-stick baking tray / oven dish and brush with the maple glaze.Step 4
Bake in a preheated oven on 150°C (300°F, Gas Mark 2) for 45 minutes brushing a new layer of maple glaze every 5 minutes.Step 5
Rest the gammon before carving.
