Roasted Marinated Chicken

Ingredients
- 1 whole chicken
- 2 tbsp yoghurt
- 2 tbsp tandoori masala
- 1 tsp salt (or to taste)
- 2 tbsp cooking oil
- 1 tbsp garlic and ginger paste
- 1 tsp crushed chilli
- 1 tsp red chilli powder
- 2 green finger chilli
- 1 tsp coriander powder
- Red food colouring (if desired)
Method
Step 1
Prepare the chicken by cutting deep slits all over.Step 2
In a bowl, combine the yoghurt, tandoori masala, salt, cooking oil, garlic and ginger paste, crushed chilli, red chilli powder, green chillies, coriander powder, and red food colouring (if desired). Mix well to form a marinade.Step 3
Marinate the chicken in the prepared marinade, cover the bowl, and place in the fridge for 2-3 hours.Step 4
Place the marinated chicken on an oven tray and cover tightly with foil.Step 5
Bake the chicken in a preheated oven at 170°C (Gas Mark 3) for 15 minutes. Carefully remove the tray from the oven and drain any excess marinade (this can be used to make a gravy).Step 6
Uncover the chicken and continue baking for another 15 minutes, or until the chicken is cooked through. If you prefer juicier chicken, keep it covered for longer.Step 7
Remove the chicken from the oven and garnish with fresh coriander, thinly sliced lemon, or thinly sliced onions before serving.
