Red Tofu Curry

Ingredients
- 0.5 cube of vegetable stock cube
- 300 g of brown rice, for serving
- 1 cup of coconut milk
- 1.5 tablespoons of red curry paste
- 2 tsp of stir fry oil
- 1 tofu, cut into cubes
- 6 cloves of garlic, miced
- 0.5 piece of fresh ginger, peeled and diced small
- 1 handful of spring onions
- 2 cups of potatoes, peeled and diced
- 3 cups of carrots, diced
Method
Step 1
Heat the oil in a pan on a medium heat, then add the tofu for about 5 minutes.Step 2
Combine all the ingredients including 2 cups of water in a slow cooker and mix.Step 3
Cover and cook on high for 4 hours.Step 4
Serve with rice, sprinkle a handful of spring onion on top and season to taste.
