Ingredients
- 1 tsp of ground cinnamon
- 0.5 tsp of ground ginger
- 80 g of benecol buttery spread
- 180 g of digestives biscuits
- 12 fresh raspberries
- 6 leaves of gelatine
- 1 heaped tsp of vanilla paste
- 500 g of ricotta cheese
- 100 g of icing sugar
- 480 g of benecol original soft cheese (3 packs of 160g)
- 200 g of frozen raspberries
- 150 g of double cream
Method
Step 1
Mix base ingredients in a bowl to an even mix.Step 2
Press mix at the bottom of a form (with removable boards) and set in refrigerator.Step 3
Set gelatin leaves first into cold water and then to small amount of warm water.Step 4
Mix together all other filling ingredients.Step 5
Add gelatin liquid to the filling mix.Step 6
Pour filling on top of base.Step 7
Set in refrigerator overnight.Step 8
Decorate the next day with berries and whipped cream.
