Ras Malai - Milk dessert

Ingredients

  • 7 cups - 1.7 Ltr full-fat milk
  • 1⁄2 cup sugar
  • 5 pieces green cardamom pods
  • 1 cup milk powder
  • 1 tsp baking powder
  • 1 tsp semolina (fine)
  • 1 tsp plain flour
  • 1⁄4 tsp green cardamom powder
  • 1 egg
  • 1 tbsp ghee
  • Almonds, to garnish
  • Pistachios, to garnish

Method

  1. Step 1

    Pour the milk into a heavy-bottomed pan and bring it to a boil over medium heat. Once boiling, reduce the heat to low and continue to stir the milk constantly, ensuring you reach the bottom of the pan to prevent sticking. Simmer gently for 10 minutes, or until the milk has reduced to approximately 4-5 cups.
  2. Step 2

    Add the sugar and green cardamom pods to the simmering milk and stir well to combine. While the milk simmers, continue to stir occasionally to prevent sticking.
  3. Step 3

    In a separate bowl, combine the milk powder, baking powder, semolina, plain flour, and green cardamom powder.
  4. Step 4

    In another bowl, whisk the egg together. Then add the ghee and whisked egg to the dry ingredients and mix well with your hands to form a smooth dough.
  5. Step 5

    Lightly grease your hands with a little oil. Take small portions of the dough and gently roll them into smooth, round balls, approximately 3cm in diameter. Ensure there are no cracks in the balls.
  6. Step 6

    Carefully add the dough balls to the simmering milk. Do not disturb them for the first 10 minutes.
  7. Step 7

    After 10 minutes, carefully turn the balls over using a spoon or spatula. Alternatively, gently swirl the pan to move the balls around. Cook for another 2-3 minutes.
  8. Step 8

    Turn off the heat and allow the Ras Malai to cool completely in the milk.
  9. Step 9

    Transfer the cooled Ras Malai to a serving bowl and garnish with crushed almonds and pistachios. Then pop in the fridge for a couple of hours before serving.
