Quinoa Patties with Courgette and Feta

For a vegetarian recipe that even meat-eaters will love, these quinoa, courgette and feta patties are great.

Ingredients

  • 3 eggs, yolk only
  • 100 g of feta, finely crumbed
  • 112.5 g of cooked quinoa, 300g cooked
  • 1 courgette, grated and well squeezed to remove water
  • 2 cloves of garlic, crushed
  • 2 tbsp of fresh parsley, chopped
  • 1 onion, finely diced

Method

  1. Step 1

    Cook the quinoa as per the pack instructions.
  2. Step 2

    Combine all the ingredients along with the cooked quinoa together and form in to approx 10 patties. Add breadcrumbs if the mixture is too wet.
  3. Step 3

    Pan fry in a little oil for 1 minute on each side.
  4. Step 4

    Then place on a baking tray and pop into a preheated oven at 180 degrees for 15 minutes.
  5. Step 5

    Remove from the oven and serve.
