Ingredients
- 2 tbsp of red wine vinegar
- 2 tbsp of caster sugar
- 100 g of seasonal baby leaf salad
- 1 tbsp of clear honey
- 50 g of pecans
- 1 large of pinch of salt
- 1 tsp of vegetable oil
- 1 tbsp of wholegrain mustard
- 3 tbsp of extra virgin olive oil
- 100 g of goat’s cheese, crumbled
- 4 victoria plums, ripe
Method
Step 1
Preheat the oven to 200°C/180°C fan/Gas 6.Step 2
In a small bowl, toss the pecans with 2 tbsp caster sugar, clear honey, vegetable oil and a pinch of salt.Step 3
Mix to coat well and arrange on a parchment-lined baking tray. Bake for 5-6 mins until golden then remove from the oven and cool.Step 4
Arrange seasonal baby leaf salad with 4 small, ripe Victoria plums, stoned and cut into eighths.Step 5
Add the pecans and goat’s cheese, crumbled.Step 6
For the dressing, pour the red wine vinegar, 3 tbsp extra virgin olive oil and 1 wholegrain mustard into a small jar with a fitted lid.Step 7
Season with salt and a pinch of caster sugar. Shake well and pour over the salad just before serving.
