Pilau Rice

This easy-to-make pilau rice by Customer Assistant Aisha, is packed with flavour thanks to warming spices like cinnamon, cardamom, and cloves. Serve alongside your favourite curry for a proper delicious meal.Time and servings

Ingredients
- 1 large chicken
- 1kg rice
- 1 cup oil
- 1 medium sized onion
- 2 cinnamon sticks
- 3-4 black cardamom
- 10-12 cloves
- 1 tsp black pepper
- 1 tbsp cumin seeds
- 3 bay leaves
- 2 levelled tbsp of salt (or to taste)
Method
Step 1
Wash the rice thoroughly and leave to soak in cold water for at least 30 minutes.Step 2
Heat the oil in a large pot or pan over medium heat. Once hot, add the chopped onion and cook until it turns golden brown.Step 3
Add half a cup of water to the pot and stir vigorously to release the browned colour from the onions.Step 4
Add the chicken to the pot and cook, mixing well, for 10-15 minutes.Step 5
Once the chicken has released its juices and they have evaporated, add the cinnamon sticks, black cardamom, cloves, black pepper, cumin seeds, bay leaves, and salt to the pot. Stir well to combine.Step 6
Add 1.5 litres of water to the pot. Bring the mixture to a simmer and cook for 5-10 minutes.Step 7
Drain the soaked rice and add the prepared mixture to the pot. Stir well to ensure the rice is evenly distributed.Step 8
Place a lid on top of the pot and cook for 5-7 minutes over medium heat. Then, remove the lid and stir the rice again.Step 9
Once the water starts to dry, reduce to a very low heat and cover the pot again. Cook for a further 25 minutes, ensuring no heat escapes.Step 10
Then turn off the heat and let the rice stand for a few minutes before gently stirring again. Serve the pilau rice piping hot and enjoy.
