Nut Brown Butter with Almonds, Capers and Parsley Sauce for Fish

Ingredients
- 1 small bunch of small bunch of parsley, chopped
- 1 tsp of capers
- 50 g of flaked almonds
- 150 g of butter
- 0.5 juice of ½ lemon
Method
Step 1
Heat the butter in a pan on a medium heat, you want the butter to start melting and to separate, as the butter starts to warm and cook the buttermilk that has separated will start to sizzle and brown, this browning is what gives you the nutty flavour and smell we want.Step 2
Once the buttermilk has started to brown add the almonds, and cook gently so they start to colour.Step 3
Once the almonds have begun to colour, add the capers and the parsley, stir in and remove from the heat.Step 4
Stir in the parsley and keep warm till needed.Step 5
To serve pour over the top of cooked fish fillets.
