Nando’s PERi-PERi Chicken Wings, PERi-Chips and Garlic Bread

Ingredients
- 12 chicken wings
- 250 g of nando’s peri-peri sauce, (choose your flavour)
- 1 handful of fresh parsley, finely chopped
- 4 garlic cloves, crushed
- 2 pinches of dried red chilli flakes
- 0.5 lemon, juiced
- 3 litres of sunflower oil
- 4 maris piper potatoes, (large)
- 125 g of salted butter
- 2 crusty bread rolls
- 1 large pinch of nando’s peri-salt
Method
Step 1
PERi-PERi Chicken Wings: Put the wings in a bowl and rub all over with the marinade. Cover, and put in the fridge for at least 1 hour.Step 2
Heat the oven to 180c (standard setting, not fan) or gas mark 4. Transfer wings to a roasting tray and cook for at least 30 mins.Step 3
Heat up a grill pan on the stove. When it’s hot, put the wings on the grill (without moving them). Turn over once to get Nando’s unique grill marks and repeat.Step 4
Generously brush over your chosen Nando’s sauce on both sides.Step 5
PERi-Salted Chips: Peel and wash the potatoes, then cut into slices about 1.5cm x 1.5cm thick chips.Step 6
Rinse chips with cold water, drain and lay chips on a tea-towel, pat dry.Step 7
Heat the oil in a deep-fat fryer to 140c or use a high-sided pot to heat the oil and use a digital thermometer to check the heat. Don’t fill the pot more than halfway.Step 8
Cook the chips for 8 mins until they are soft but still pale.Step 9
Lay chips in a single layer on a tray and put in the fridge to cool .Step 10
Now heat the oil to 180c and fry the chips until golden brown.Step 11
As soon as the chips come out of the fryer, tip into a large bowl and toss with PERi-PERi Salt.Step 12
Garlic Bread: Mix the garlic, parsley, lemon juice and chilli into the butter until blended together.Step 13
Slice the bread rolls in half horizontally and spread each half with garlic butter.Step 14
Put the rolls back together and wrap in foil. Heat oven to 180c (gas mark 4). Bake the rolls for 10-15min.Step 15
Remove the foil and in a non-stick pan, fry them garlic side down until golden brown.
