This traditional Turkish dish features crispy flatbread topped with a flavorful blend of spiced lamb mince. Easy to make and perfect for a light meal or a delicious appetizer.

Ingredients

  • 250g gram flour
  • 400 mls water
  • 250g lamb mince(beef mince can be used if preferred)
  • 1 tsp sumac
  • 1 tsp chilli powder
  • 2 cloves of garlic, finely chopped
  • 2 tomatoes, diced
  • 4 spring onions, finely chopped
  • Pomegranate seeds, to serve
  • Pickled pink onions, to serve
  • Coriander, to serve
  • Lemon wedges, to serve

Method

  1. Step 1

    Preheat the oven to 200°C (180°C fan/Gas Mark 6).
  2. Step 2

    In a large bowl, combine gram flour and water. Mix until a dough forms, avoiding overmixing. Let the dough rest while you make the lamb mixture.
  3. Step 3

    In a separate bowl, combine lamb mince (or beef mince if preferred), sumac, chilli powder, garlic, diced tomatoes, and spring onions. Season with salt and pepper to taste.
  4. Step 4

    Grease and line two large baking sheets. Divide the dough into four equal pieces. On a lightly floured surface, roll each piece of dough into a thin, rough circle.
  5. Step 5

    Transfer each flatbread to the prepared baking sheets. Spread the lamb mixture evenly over each flatbread. Bake in the oven for 10 minutes, or until the flatbreads are golden brown and the lamb mince is cooked through.
  6. Step 6

    Serve straight away with some colourful toppings such as pomegranate seeds, pickled pink onions, fresh coriander, and lemon wedges, if you like.
