Heart-Shaped Waffles with Warm Spiced Berries

Ingredients
- 200 ml of coconut milk
- 250 g of frozen mixed berries
- 75 g of buckwheat flour
- 1 dusting of icing sugar, to dust
- 2 tbsp of maple syrup
- 25 g of oats
- 0.5 tsp of baking powder
- 1 tsp of cinnamon
- 0.25 tsp of ground mixed spice
- 1 tsp of coconut oil, for frying
Method
Step 1
To make the waffle batter place the buckwheat flour, baking powder, oats, cinnamon and salt in a mixing bowl.Step 2
Slowly add the coconut milk to the dry ingredients. Whisk constantly to avoid lumps.Step 3
Add the 1 tbsp maple syrup, mix well and pour into a measuring jug. Allow to rest for 5 minutes.Step 4
To make the warm spiced berries place the frozen mixed berries, 1 tbsp maple syrup and mixed spice in a small pan with a lid.Step 5
Heat gently for 2 minutes, or until warmed through, allowing the berries to keep their shape.Step 6
To fry the waffles brush a waffle pan with a little melted coconut oil and heat over a medium heat.Step 7
Pour the waffle mix into the pan, spreading evenly, and fry for 3-4 minutes on each side – or until golden brown.Step 8
Repeat to use all the remaining batter.
