Ingredients

  • 1 handful of fresh basil, minced
  • 110 g of goats cheese
  • 12 tomatoes
  • 0.5 tsp of freshly ground black pepper
  • 0.5 tsp of salt

Method

  1. Step 1

    Bake tomatoes in a preheated oven set at 180 C for 45 minutes.
  2. Step 2

    In a bowl mix together the cheese, basil, salt and pepper until well blended.
  3. Step 3

    When the tomatoes are cooked through, wait for them to cool down then slice the tops off.
  4. Step 4

    With a small spoon carefully scoop the pulp out to make a hollow and sturdy shell. Drain off any juice that may be in the tomato shells.
  5. Step 5

    Fill the tomatoes with the mixture and carefully place the top back on. Repeat until all the mixture is used.
  6. Step 6

    Arrange onto a plate or platter and serve.
