Easy Mandarin Cheesecake

Zesty and delicious, this cream cheesecake is easy to whip up.

Ingredients

  • 340 g of cream cheese
  • 1 tbsp of golden syrup
  • 6 tbsp of butter
  • 100 g of caster sugar
  • 250 g of mascarpone cheese
  • 1 tin of drained mandarin oranges 298g, any fruits could be used
  • 1 tsp of vanilla essence
  • 1 zest of 1x orange
  • 200 ml of double cream
  • 200 g of digestive biscuits, 15 biscuits

Method

  1. Step 1

    Line a springform tin or a tin with a bottom that can be removed easily with cling film or greaseproof paper.
  2. Step 2

    Break the biscuits up in a bowl or in a bag with a rolling pin. Or you can crush them all up in a food processor.
  3. Step 3

    Melt the butter and the golden syrup in a pan and add to the tin with broken biscuits, press down to get a firm biscuit base.
  4. Step 4

    Add all the filling ingredients together and the zest of 1x orange (saving the mandarins till last) and whisk until thick and firm.
  5. Step 5

    Place this in the tin, and arrange the mandarins on top.
  6. Step 6

    Place in a fridge and allow to chill for at least 4 hours (over night is best).
