Easy Mandarin Cheesecake

Ingredients
- 340 g of cream cheese
- 1 tbsp of golden syrup
- 6 tbsp of butter
- 100 g of caster sugar
- 250 g of mascarpone cheese
- 1 tin of drained mandarin oranges 298g, any fruits could be used
- 1 tsp of vanilla essence
- 1 zest of 1x orange
- 200 ml of double cream
- 200 g of digestive biscuits, 15 biscuits
Method
Step 1
Line a springform tin or a tin with a bottom that can be removed easily with cling film or greaseproof paper.Step 2
Break the biscuits up in a bowl or in a bag with a rolling pin. Or you can crush them all up in a food processor.Step 3
Melt the butter and the golden syrup in a pan and add to the tin with broken biscuits, press down to get a firm biscuit base.Step 4
Add all the filling ingredients together and the zest of 1x orange (saving the mandarins till last) and whisk until thick and firm.Step 5
Place this in the tin, and arrange the mandarins on top.Step 6
Place in a fridge and allow to chill for at least 4 hours (over night is best).
