A delicious savoury twist on the classic crêpe. Start with our Basic Pancake Recipe then top with a creamy mix of mushroom, courgette and streaky bacon.

Ingredients

  • 1 tsp of wholegrain mustard
  • 8 rashers of streaky bacon
  • 500 g of courgettes, coarsely grated
  • 2 tbsp of crème fraîche
  • 1 tbsp of sunflower oil
  • 300 g of mushrooms, wiped and quartered

Method

  1. Step 1

    Grill the bacon until crispy. Meanwhile, heat the oil in a non-stick pan and stir-fry the mushrooms for 5 minutes until softened. Add the mustard and courgettes and stir-fry for 3 minutes until they soften a little.
  2. Step 2

    Season to taste and stir in the crème fraîche.
  3. Step 3

    Divide between 4 cooked pancakes and criss-cross 2 rashers of bacon on top to serve.
