Coddled Eggs

This recipe makes a great light lunch, and it’s versatile too! Simply add your own ideas to personalise it. Time and servings

Ingredients
- 4 eggs
- 4 slices toasted bread
- 300 g of mushrooms, sliced and fried
- 20 g of butter or oil, for greasing the pots, and some for frying the mushrooms if using, about 20g is plenty
Method
Step 1
Grease the pots/ramekins with a little butter or olive oil.Step 2
Crack eggs into the pots and season with salt and pepper to taste.Step 3
If using any other ingredients, add them to the eggs, try using chopped cooked bacon, mushrooms, smoked salmon or cooked flaked salmon, or even grated cheese and chopped tomatoes.Step 4
Put a pan of water on the stove to boil, once it’s boiling, turn down the stove so the water simmers gently.Step 5
Add the pots to the pan and cook till the eggs have set, this should take about 10-15 minutes, you can pop the tray in the oven oven for 2-3 minutes to cook the tops if you want but the whole thing can be cooked on a stove.Step 6
Serve with fingers of toast. Season to taste.
