Cod, Chorizo and Butterbean Bake

A taste of Spain in every bite! This Cod, Chorizo, and Butterbean Bake combines the delicate flavour of cod with the smoky spice of chorizo and the creamy texture of butterbeans.Time and servings

Ingredients
- 2 cod fillets
- 140g diced spanish chorizo
- 250g baby plum tomatoes
- 15g rose harissa paste
- 150g green beans, trimmed
- 15g mayonnaise
- 1 lemon
- 2 garlic cloves
- 400g butter beans in water
Method
Step 1
Preheat the oven to 200°C (400°F, Gas Mark 6).Step 2
Slice the tomatoes in half, tip into a baking tray with a drizzle of oil. Bake for 10 minutes.Step 3
Spread the harissa over the top of the cod and set aside.Step 4
Add the chorizo to a frying pan set over a medium heat and gently fry for 5 minutes.Step 5
Drain and rinse the butter beans then add them to the pan with the chorizo, stirring so the beans get coated in the chorizo oil. Cook for 5 more minutes.Step 6
Remove the tomatoes from the oven. Pour the chorizo and beans into the baking dish along with any chorizo oil from the pan. Place the fish fillets on top of the chorizo, beans and tomatoes and return to the oven for another 15 minutes until the fish is cooked through.Step 7
Juice and zest the lemon and grate the garlic. Mix together with the mayonnaise and season to taste with salt and pepper.Step 8
Bring a pan of water to the boil and cook the green beans for 3-5 minutes. Until bright green and tender.Step 9
When the fish is cooked through, remove the dish from the oven. You can easily remove the skin of the fish if you don't like it by peeling it off - it should come off very easily.Step 10
Serve everything together with a dollop of the Aioli.
