Clementine and Panettone Trifle

This delicious but simple pudding will make a fitting finale to your Christmas meal.

Ingredients

  • 250 g of panettone
  • 100 ml of clementine juice
  • 6 clementines
  • 60 ml of orange liqueur
  • 4 tbsp of cranberry sauce
  • 30 g of dark chocolate
  • 600 ml of whipping cream
  • 80 g of caster sugar

Method

  1. Step 1

    Arrange the panettone at the bottom of a glass serving bowl. Add the clementine slices on top.
  2. Step 2

    Warm together the cranberry sauce, liqueur and juice and drizzle over the clementines. Allow to cool and soak in the panettone.
  3. Step 3

    Put the sugar, clementine zest and juice into a bowl and stir until the sugar dissolves.
  4. Step 4

    Whip the cream until it begins to form soft peaks, gradually add the juice mixture and keep whisking until soft and pillowy. Spoon onto the panettone and clementines and chill.
  5. Step 5

    Decorate the top with grated chocolate and orange or clementine zest.
