Chorizo Bites with Spicy Dipping Sauce

Ingredients
- 1 tsp of red wine vinegar
- 500 g of chorizo cooking sausages
- 300 g of puff pastry
- 0.5 tsp of cumin seeds
- 0.5 tsp of fennel seeds
- 1 tsp of ground paprika
- 1 tsp of ground cumin
- 400 ml of passata
- 1 sprinkle of poppy seeds
- 1 egg
- 1 pinch of pinch of sugar
- 1 tsp of crushed red chillies
- 50 g of fresh breadcrumbs
- 2 cloves of garlic
- 1 tbsp of olive oil
Method
Step 1
Heat the oven to 220°C/200°C Fan/Gas 7.Step 2
Remove the casings from the chorizo and mix the sausagemeat with the breadcrumbs, fennel seeds, cumin seeds and some black pepper.Step 3
Roll the pastry into a 30cm square and cut in half.Step 4
Divide the sausage mixture in 2, roll to the length of the pastry and place one on each piece.Step 5
Brush the edge with the egg, roll up then place seam side down on a tray and refrigerate for 30 minutes to firm up.Step 6
Cut the sausage rolls into 3cm pieces and place on a lined baking tray.Step 7
Brush with egg and sprinkle with poppy seeds. Bake for 25 minutes until cooked through and golden.Step 8
Meanwhile for the sauce, sauté the garlic in the oil until golden.Step 9
Add the remaining ingredients , season and cook for 10 minutes to reduce a little and thicken.Step 10
Serve the sausage rolls with warm sauce.
