Ingredients

  • 300 g of chopped roasted hazelnuts
  • 550 g of dark chocolate
  • 30 g of butter
  • 220 ml of double cream
  • 6 eggs
  • 150 g of caster sugar
  • 150 g of muscovado sugar

Method

  1. Step 1

    Melt the chocolate and leave to cool.
  2. Step 2

    In a food processor, blitz the nuts with the 2 sugars until you have a sand like consistency.
  3. Step 3

    Add 1 whole egg.
  4. Step 4

    Separate the other 5 eggs and mix the 5 yolks into the nut mixture along with the melted chocolate. Beat well until smooth.
  5. Step 5

    In a separate clean bowl, whisk the egg whites until you get stiff peaks.
  6. Step 6

    Take 1/3 of the whites and beat them into the nut mixture, then gently fold in the rest.
  7. Step 7

    Pour into a lined 23cm baking tin and bake at 150 degrees for 35-40 minutes
  8. Step 8

    Whilst the cake is cooling make the ganache.
  9. Step 9

    Chop the chocolate and place in a bowl. Warm the cream and butter in a pan but do not boil it.
  10. Step 10

    Pour it over the chocolate and mix it well. You should have a smooth and shiny ganache.
  11. Step 11

    When the cake has cooled, remove it from the tin and cover the top and sides of the cake with the ganache using a palette knife.
  12. Step 12

    Try and make it as smooth as possible. You could dust the top with a little cocoa powder if you wish.
