Ingredients
- 2 garlic cloves, crushed
- 4 finely sliced spring onions, (40g)
- 200 g of beansprouts
- 1 tbsp of oil
- 1 tbsp of tomato puree or tomato ketchup
- 1 tbsp of reduced salt soy sauce
- 1 red chilli, you can use 1x fresh chili, 1/2 teaspoon of chilli paste or 7g of chili powder
- 20 g of fresh ginger
- 1 carrot, cut into matchsticks (90G)
- 0.5 head of broccoli, (100g)
- 2 nests of egg noodles
- 2 chicken breasts, you can use defrosted chicken breasts if you have frozen
Method
Step 1
Cook the noodles to pack instructions.Step 2
Make a sauce by mixing the chilli with the soy sauce and tomato puree.Step 3
Cut the chicken into strips.Step 4
Cut the carrots into matchsticks, cut the broccoli into little florets (Or baby trees).Step 5
Finely slice the spring onions.Step 6
Add the oil to a pan and fry the chicken, until it’s white and slightly browning, which should take about 3-4 minutes.Step 7
Add the ginger and garlic to the pan with the chicken and cook for a further 2-3 minutes stirring all the time.Step 8
Add the vegetables (except the spring onions and beansprouts) and cook for a few more minutes (2-3 mins).Step 9
Let the whole pan cook through for a further 2-3 minutes.Step 10
Add the noodles, stir in well and cook for a minute or so.Step 11
Add the sauce, stirring well.Step 12
Add the beansprouts and the onions, stir well, and allow to heat through and wilt slightly.Step 13
