Clafoutis is a delicious French baked dessert made with fruits, traditionally cherries. Serve with Crème fraîche and a few extra whole cherries for a treat.

Ingredients

  • 75 g of caster sugar
  • 500 g of cherries, pitted
  • 4 tbsp of icing sugar
  • 30 g of unsalted butter
  • 1 crème fraîche
  • 2 eggs
  • 90 g of plain flour
  • 150 ml of semi-skimmed milk
  • 1 tbsp of vanilla extract

Method

  1. Step 1

    Preheat the oven to 180°C/160°C fan/Gas 4.
  2. Step 2

    Grease four 14cm x 3cm baking dishes with unsalted butter, then dust with 4 tbsp icing sugar.
  3. Step 3

    Melt the rest of the butter. Then, using an electric whisk, beat 2 eggs with the caster sugar.
  4. Step 4

    Add milk, vanilla extract, plain flour and beat again. Stir in the melted butter.
  5. Step 5

    Divide the cherries into each dish and pour the batter over.
  6. Step 6

    Cook for 25-30 mins or until golden and set.
  7. Step 7

    Dust with icing sugar and serve with crème fraîche and a few whole cherries.
