Clafoutis is a delicious French baked dessert made with fruits, traditionally cherries. Serve with Crème fraîche and a few extra whole cherries for a treat.Time and servings

Ingredients
- 75 g of caster sugar
- 500 g of cherries, pitted
- 4 tbsp of icing sugar
- 30 g of unsalted butter
- 1 crème fraîche
- 2 eggs
- 90 g of plain flour
- 150 ml of semi-skimmed milk
- 1 tbsp of vanilla extract
Method
Step 1
Preheat the oven to 180°C/160°C fan/Gas 4.Step 2
Grease four 14cm x 3cm baking dishes with unsalted butter, then dust with 4 tbsp icing sugar.Step 3
Melt the rest of the butter. Then, using an electric whisk, beat 2 eggs with the caster sugar.Step 4
Add milk, vanilla extract, plain flour and beat again. Stir in the melted butter.Step 5
Divide the cherries into each dish and pour the batter over.Step 6
Cook for 25-30 mins or until golden and set.Step 7
Dust with icing sugar and serve with crème fraîche and a few whole cherries.
