As easy as lemon and sugar but twice as interesting; top your pancakes with this delicious sweet and fruity recipe. To prepare the pancakes themselves, simply follow our Basic Pancake Mix Recipe.

Ingredients

  • 200 g of blueberries
  • 500 ml of vanilla ice cream
  • 60 g of pistachios, shelled and chopped
  • 4 tbsp of maple syrup

Method

  1. Step 1

    Make the pancakes, following our basic pancake recipe.
  2. Step 2

    Scoop balls out of the ice cream and top each pancake with 2 scoops.
  3. Step 3

    Scatter blueberries and pistachios over the top and drizzle with a tablespoonful of maple syrup.
