Ingredients
- 2 tbsp of caster sugar
- 150 g of dark chocolate
- 400 g of cherries
- 2 tbsp of golden syrup
- 150 g of sunflower spread
- 200 ml of whipping cream
- 300 g of plain flour
- 2 tbsp of cocoa powder
Method
Step 1
Sift the flour and cocoa into a bowl. Stir in the sugar then rub in the spread until the mixture resembles fine breadcrumbs. Add enough cold water (about 150ml) to mix to a soft dough. Wrap and chill for 30 minutes.Step 2
Break the chocolate into squares and add to a bowl with the syrup and cream. Place the bowl over a pan of simmering water and heat, stirring until the chocolate melts and the mixture is smooth. Cool then chill until cold.Step 3
Heat the oven to 200°C/180°C fan/Gas 6. Roll out the pastry on a lightly floured surface and use to line 8 tartlet tins. Line with baking paper, fill with baking beans and cook for 15 minutes.Step 4
Remove the beans and paper and cook for 5 minutes. Take out of the oven; allow to cool.Step 5
Whip the chocolate mixture until thick and creamy, divide between the tart cases and top with fresh cherries.
