Ingredients

  • 4 egg whites
  • 400g icing sugar
  • 200g unsalted butter, softened and cut into cubes
  • 3 large eggs
  • 175g golden caster sugar
  • 120g self-raising flour
  • 50g cocoa powder
  • 400g chocolate fudge icing
  • 1 tsp baking powder
  • 24 red jelly beans
  • Chocolate icing pen
  • 1 pack of gummy/soft sweets (for skewers)
  • Gold hundreds and thousands
  • Black gel food colouring
  • Toothpicks
  • 12 red cupcake cases

Method

  1. Step 1

    Make Royal Icing Grills (5 hours+ in advance): In a large bowl, beat egg whites with a mixer on high speed until foamy. Gradually add the icing sugar and continue beating until thickened. Mix in black food colouring until you achieve a dark brown or black. Transfer the icing to a piping bag fitted with an extra small nozzle. Pipe grill shapes (a circle with multiple horizontal lines inside) onto a baking sheet or non-stick wax paper. Let these dry for 5 hours or overnight until completely hardened. Carefully peel them off. (Alternatively, you can use melted white chocolate for the grills.
  2. Step 2

    Prepare Cupcake Batter: Preheat your oven to 200°C (180°C Fan/Gas Mark 6). Line a 12-hole muffin tin with the red cupcake cases. In a bowl, sift the cocoa powder and mix it with 7 tablespoons of boiling water to create a smooth paste. Add all the remaining cupcake ingredients (butter, eggs, golden caster sugar, baking powder, and self-raising flour) to the bowl with the cocoa paste. Use an electric hand whisk to combine until the batter is smooth.
  3. Step 3

    Bake Cupcakes: Divide the cupcake batter evenly among the prepared cupcake cases. Bake for 15-20 minutes, or until a skewer inserted into the center of a cupcake comes out clean. Let them cool completely on a wire rack.
  4. Step 4

    Decorate Cupcakes: Once cooled, spread chocolate fudge icing generously over each cupcake. Sprinkle gold hundreds and thousands around the edges to resemble glowing coals.
  5. Step 5

    Create Skewers: Thread gummy/soft sweets onto toothpicks in groups of three.
  6. Step 6

    Assemble BBQ Design: Using the chocolate icing pen, draw grill lines onto the red jelly beans to make them look like tiny burgers. Place two "burgers" (jelly beans) and one sweetie skewer on top of each iced cupcake. Carefully place a dried royal icing grill on top of the "burgers" and skewer.
