This cheese and onion quiche recipe is a great opportunity to make the most of leftovers, simply add them to the recipe!Time and servings

Ingredients
- 250 g of plain flour
- 350 g of shortcrust pastry
- 330 ml of semi-skimmed milk
- 4 eggs, beaten
- 100 g of butter
- 2 onions, finely chopped
- 150 g of cheddar cheese, you can use any cheese you want
Method
Step 1
If you are making your own pastry you need to do this first, rub the butter into the flour with your finger tips to create a sandy texture.Step 2
Add the water and mix together to achieve a smooth pastry that’s not too wet or too dry, and allow to rest in the fridge for 20 minutes before using.Step 3
Preheat an oven to 180c Grease and line a flan case with the pastry and chill for 15 minutes.Step 4
Cover the base and the sides of the pastry with a piece of foil and bake for 15 minutes.Step 5
Fry the onions in a pan until golden brown and soft. You can use any filling, such as chopped tomatoes, leftover vegetables or even bacon leftover from breakfast.Step 6
Beat the eggs with the milk to make a custard.Step 7
Stir in the onions, the cheese and season.Step 8
Pour the filling into the baked pastry shell.Step 9
Bake in the oven for 25-30 minutes.Step 10
The quiche should be set and not wobbly in the centre when shaken gently.Step 11
Allow to cool before serving.
