Simple Tinned Salmon and Vegetable Creamy Pasta

Ingredients
- 2 tsp of olive oil
- 1 juice and zest of 1 lemon, 30g juice and 5g zest
- 200 g of frozen diced vegetables
- 170 g of tinned salmon
- 200 g of dried pasta
- 0.5 cube of vegetable stock, Made with 1/2 cube & 100ml pasta water
- 80 g of cream cheese (low fat)
Method
Step 1
Cook the pasta according to the packet instructions, but add the stock cube to the water. When the pasta is cooked, reserve the water you have cooked the pasta in to make the sauce with.Step 2
While the pasta is strained, add the frozen veg to the empty pasta pan and add the oil, cooking for 2-3 minutes until it has a soft texture, and is opaque in appearance.Step 3
Add the pasta back to the pan, and spoon in the cream cheese, lemon juice and zest and 2-3 tablespoons of the reserved pasta water, stir in well.Step 4
Add some of the stock (about 3-4 tablespoons) to get a smooth sauce like appearance.Step 5
Add the salmon, and stir in the pasta.Step 6
Season to taste with salt and pepper.Step 7
Serve with rocket leaves and enjoy!
