Great for a hearty breakfast or light lunch, this simple and tasty dish features spicy rice with flakes of salmon and eggs.

Ingredients

  • 4 boiled eggs
  • 4 spring onions, (Optional)
  • 800 ml of veg stock
  • 20 g of fresh parsley (optional)
  • 2 tsps of smoked paprika
  • 100 g of frozen peas, (You can use some frozen green beans too)
  • 1 clove of garlic clove
  • 1 juice of 1 lemon
  • 1 large onion
  • 300 g of basmati rice
  • 213 g of tinned salmon
  • 3 tablespoons of curry powder

Method

  1. Step 1

    Cook the rice to the packet instructions.
  2. Step 2

    Add the oil to a pan and cook the chopped onion and the garlic until softened, add the spices and cook for a couple of minutes.
  3. Step 3

    Add the cooked rice, and stir then add the stock.
  4. Step 4

    Add the tinned salmon, peas and the lemon juice and sliced boiled eggs.
  5. Step 5

    Stir in and taste to check the seasoning.
  6. Step 6

    Enjoy.
