Ingredients

  • 1 dash of freshly ground black pepper
  • 1 cucumber, small piece finely chopped
  • 1 tbsp of red onion, finely chopped
  • 1 princes mackerel sizzle lime and chilli
  • 3 cherry tomatoes, chopped
  • 3 lettuce leaves
  • 1 tsp of green chilli, finely chopped
  • 1 wholemeal or white pitta
  • 1 dash of salt

Method

  1. Step 1

    Sizzle the mackerel and marinade over a medium heat for 1½ minutes each side, spooning the marinade over the fish.
  2. Step 2

    While the fish is cooking, mix together the tomatoes, cucumber, red onion and chilli. Season with a little salt and pepper.
  3. Step 3

    Warm the pitta in a toaster or under the grill. Split and fill with the lettuce leaves, salad and mackerel, spooning a little marinade on top.
